Gluten Free/Vegan Apple Cinnamon Muffin
It’s cold and cloudy outside. I needed some warmth while getting some work done on the computer. I looked around the kitchen drinking my ginger tea an saw my bowl of apples on the counter. So I decided to use what I have on hand and I came up with this recipe for a Gluten Free/Vegan Apple Cinnamon Muffin with an oatmeal crumble topping. I thought the kids might really dig it as an afternoon snack when they come home from school today. It didn’t take long to make and only 20 minutes to smell up the kitchen. Cinnamon and apples together are such a warming and comforting smell.
Makes 9 Muffins
Here’s what you’ll need:
1 1/2 cups Bob’s Gluten Free Flour Mix
3/4 cup palm Sugar
1/2 tsp salt
2 tsp baking powder
1 tsp Xanthum Gum
1 tsp ground cinnamon
1/3 cup melted coconut oil
1 egg or chia seed
1/3 cup hemp milk
1/3 cup apples sauce
1 apple – cored and chopped
1/3 cup palm sugar
1/3 cup all-purpose flour
1/2 cup gluten free oats
1/2 cup melted coconut oil
1 1/2 tsp ground cinnamon
Preheat the oven to 375 degrees. Grease nine muffin cups or line with paper muffin liners. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 tsp cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
In a small bowl, stir together 1/3 cup palm sugar, 1/3 cup flour, butter, 1/2 cup oats and 1 1/2 tsp cinnamon. Mix together with fork and sprinkle over unbaked muffins. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
