Chicken Ratatouille over Gluten Free Pasta Spirals Tonight I made a great and simple dinner for the family. It took less then 15 minutes! Plus everyone raved about it. I have a great love affair with Trader Joe’s. I wish we had one closer in Ashburn but we don’t so I have to drive all the way to Reston which is a 20-30 minute drive. But it is worth it every time because of their great prices, ingredients and rotating new products. And they have some great quick time saving food products with ingredients that I like feeding my family. This last trip I came across their Ratatouille. I bought it cause my family loves ratatouille but I don’t make it often and I thought I would give it a try. I have had the jar for a while trying to decide what to eat it with and when. I came across it when I was simplifying my cabinets yesterday so I decided to finally use it in a dish. (To read more about that adventure check out http://joyinthesimple.tumblr.com) Tonight I figured out a tasty dish recipe to make with this little meal helper. it’s always a good idea keep a few of these quick little helpers in the pantry to help with mealtimes when you don’t have a lot of time. But it is important to make sure they are made with ingredients you would use if you made it at home yourself. Ingredients: 1-2 tbsp coconut oil 1 onion, peeled and sliced 1 red pepper, seeded and sliced into thin strips 3 cloves of garlic (I love garlic) 1 1/2 pounds boneless chicken thighs, cut into bite size strips or chucks 1 jar Trader Joe’s Ratatouille Add 1 tablespoon of coconut oil into a hot pan. Toss in the sliced onions and red pepper, sauté for about 3-5 minutes. Add in the addition 1 tablespoon of coconut oil if needed and toss in the chicken and garlic. Continue to sauté until chick browns and fully cooks 8-10 minutes. Then pour in the jar of Ratatouille cook until everything is heated through. Season with salt and pepper to taste. You can serve it over pasta spirals or rice.
