Basic Chicken Soup

Baby It’a Cold Outside Since we are decorating our Christmas Tree this evening we are a bit busy. So last night I made some yummy chicken and veggie soup to enjoy tonight. Eating soup makes the whole family so happy and warm. Chicken soup is so simple to make and satisfying. It doesn’t take much prep just time for the stock to develop. 1 whole organic chicken 2 large carrots peeled and cut in half 4 large celery stalks cut in half 1 onion peeled and cut in half 2 potatoes peeled and cut in half 1/2 garlic bulb Place everything in a stock pot. Then add enough water to cover all the ingredients. Bring to boil then simmer for 1 hour. Then remove enough meat from the chicken to add to the finished soup. About 3 cups worth of meat is good. I use a combination of the dark and light meat and set aside. Then continue to summer for another 2 hours. Strain out the broth and discard the chicken and veggies. You should end up with a stock that is a cloudy pale yellow. Now place the chicken and veggie stock back to the stock pot. To it add the following. 1 carrots, peeled and chopped 1 onion, peeled and chopped 4 ribs celery, chopped 2 potatoes, peeled and chopped Bring to a strong simmer for about 15 minutes. Meanwhile chop the chicken meat you previously set aside. Add it to the soup and simmer for 5 more minute. Add salt and pepper to taste. If you desire you can also add some cooked rice or noodles.
