Vegan Banana Cream Pie

Vegan Banana Cream Pie There is a great vegan blog I follow sometimes by Kathy Patalsky called Healthy Happy Life.  She has some great vegan cooking techniques and recipes.  She had an amazing looking picture of a Vegan Banana Cream Pie topped with Whipped Coconut Cream.  Banana Cream Pie is one of my husband’s favorite desserts.  I haven’t made or eaten one in years since going gluten free and staying way from dairy.  I tried her recipe with a few alternations to make sure the pie was gluten free.  Here is a picture of mine.  I learned a lot by trying out this recipe.  I absolutely love the Whipped Coconut Cream!  But I made the mistake of accidentally using a little too much of the coconut milk instead of just the cream.  This made my cream a little less whipped.  So if you try this recipe please make sure you only whip the cream and leave all the liquid behind.   The taste of this whipped cream was amazing and really is creamy like Cool Whip.  My kids didn’t really love the taste of the pie.  My husband liked it okay enough and was grateful for the attempt.  Half of the pie has just been sitting in the fridge and no one has asked for seconds.  This is a clear indication that it wasn’t a hit.  But then again, my kids haven’t found a taste for some of the vegan products that try to mimic things like diary or meat.  Which is a good thing because I’m all about whole foods and eating as clean as possible.
