Kid's Lunch - 10/07/2011

Kimbop Lunch This morning I have a traditional Korean picnic lunch called kimbop for the kids. It’s basically a sushi style seaweed roll without the raw fish. It’s made with rice that has been lightly coated with sesame oil, salt, and pepper. Then rolled together with sauted carrot, sauted zucchini, and pickled radish in a seaweed wrap. These are just the veggies I had on hand but you can use pretty much use anything. I usually also add sauted spinach and strips of egg crepe but I just didn’t have any in the house. Plus I wanted to make it vegan. Kimbop is a great picnic food because the ingredients can me made ahead, assembled in the morning, and served at room temperature. Also it’s something you can eat with your fingers! I also like it especially because it’s another “salad but not” recipe. It’s packed with tons of veggies and even seaweed which is excellent for detoxification and thyroid balance. It’s the same every morning for every parent who packs lunch for their kids. They spend way too much time walking around the kitchen and asking WHAT AM I GOING TO PACK?! I have a few tricks of the trade that answers this question quickly and without stress. Your approach however has to do with what type of person you are and how you like to do things. 1. Pack the lunch the night before (This works for many but not me. We have too many food restrictions and I like to serve a hot lunch when ever I can.) 2. Make a kids’ lunch menu and stick to it. (This used to work for me when the kids were little. It works especially well because it makes packing lunch and grocery shopping so easy) Well I use a combination of both. I do this because it works for my family. I make a weekly meal menu including breakfast, lunch, and dinner. I make the menu so that several times during the week the kids can take leftovers from dinner for lunch. For example, my kids took left over Mashed Potatoes and Lentil Balls the day after we had them for dinner. In packing lunch it’s really all in the planning. And yes I know some of you are saying you don’t have time to sit down and plan these things out. The truth is you need to get over thinking this way. Because in reality a little planning will go a long way and will save you so much more time and stress. It will help your mornings move more smoothly. You may even save enough time to sit down and enjoy that cup of coffee or tea. Or in my case write something to my blog.
