Pork Chop Dinner

Dinner tonight was a big hit! Pan seared some pork chops from the farmer’s market, finishing them off in the oven. Made mashed potatoes from potatoes I scooped out when I made the potato skins the other night. Then a quick salad with an apricot dressing. Simply take a couple spoonfuls of good quality apricot jam, add balsamic vinegar, and some olive oil.
