Dinner in Under 20 minutes!

Dinner in 12 minutes with only 5 minute prep time. Tonight’s dinner had to be something super quick because I was meeting with a client during the usual time I cook dinner. So this afternoon I took five minutes to whip up a quick marinade between grocery shopping and prepping for thanksgiving dinner for 17 people. It took all of 5 minutes to put the marinade together. I placed the flank steak into the marinade and let it sit in the fridge till I was ready to grill it up. I know people don’t love flank steak all that much but I think it is a totally misunderstood and underutilized cut of beef. It’s cheap so I don’t think people give it too much thought or the respect it deserves. Plus I think people don’t like to eat it because they do two things wrong. First, they don’t cook it correctly. This cut of beef cooks up super quick, just 6 minutes per side. This gives a perfect red center between rare and medium rare. Second, people cut the flank steak incorrectly. They key is to allow the cooked piece of meat to rest for a few minutes before slicing to allow it to trap all the juices inside. Also it is super important to cut a flank steak across the grain instead of along it. When you cut along the grain you get long strips of beef which tough and hard to chew. This is good for certain recipes but does not work when using a flank steak as a main dish. When you cut a piece of flank steak you cut across the grain. This leaves the pieces of beef tender and easy to chew. Flank steaks are wonderful because they are cheap, easy to work with, quick to cook up, and if done right, tasty. What more could you want then to satisfy your hunger while saving you both time and money. I made the marinade flank steak this afternoon in just five minutes. Then when I was ready I removed the piece of steak from the marinade and grilled it on the stove top in my grill pan. I served flank steak with tons of steamed broccoli. It took all of 12 minutes to get a tasty dinner on the table for my family of four and cost me $17.23. That is about $4.30 per person for a steak dinner. So simple, quick, and tasty. Give the recipe a try and let me know how your family likes it. Grilled Marinated Flank Steak (adapted from a recipe from chef Emeril) 2-3 pounds of flank steak 1/2 cup red wine 1/4 cup gluten free soy sauce 2 Tbsp garlic, finely chopped 2 Tbsp honey 1 Tbsp tomato paste 1 tsp black pepper 2 Tbsp creole seasoning Combine everything except the steak in a zip lock bag or a large container with lid. Move around the ingredients to mix well. Toss in the steak, coat with the marinade, seal and place in the fridge for at least 4 hours or longer. You can use a grill or a stove top with a grill pan. Heat up you heat source and grill steak for 6 minutes per side. You may simmer the marinade for 10 minutes in a sauce pan to make a sauce of desired. Otherwise you can throw away the marinade. Let the steak stand for at least 5 minutes before carving across the grain.
