Gluten Free Vegan Pumpkin Muffins Topped with Pecans and Maple Syrup I woke this weekend and just felt like I should make muffins for my family for breakfast. I looked in the pantry and fridge to see what I had. I had the ingredients that I thought would lend perfectly to making some yummy pumpkin muffins. They were easy to make. It took me about 10 minutes to mix everything and about 20 minutes to bake. I made the muffin mixture and put them into the muffin tins, topped them with some chopped up pecans my father-in-law sent me from their pecan trees in Georgia, then drizzled each muffin with maple syrup. They smelled so good coming out of the oven and tasted so good. My family ate them up. I took a small bite for texture and taste even though I am on a juice detox.
