Peach and Blackberry Crumble

Peach and Blackberry Crumble Dessert last night was a big hit and took only 10 minutes to prep and 25 minutes to bake. I purchased these peaches from Beechwood Orchards at the Leesburg Farmer’s Market on Saturday. I had been buying peaches and plums from them all summer. There peaches are super juicy and full of flavor, perfect for any recipe or just eating plain. My family and I have been eating several peaches for breakfast then enjoying them in juices or smoothies in the afternoons. Last night I decided to bake them instead. Beechwood Orchards is a truly family owned and operated orchard. It has been around for five generation in Adams County in Biglerville, PA. Currently it is being run by David and Tammy Garretson, along with their son Shawn Garretson, and daughter Melissa Allen. Now even Melissa’s young daughters Isabelle and Cammy help around the orchard. Shawn can be found selling his family’s wide selection and varieties of peaches, plums, berries, and apples at the Leesburg Farmer’s market every Saturday. So check them out and let them know I sent you. I can truly say it is going to be worth the short trip to Leesburg. Farmer’s markets are a great place to take kids to show then first hand what real food should look and taste like. It is something my kids look forward to every Saturday. They walk around, talk to the different farmers, and enjoy a breakfast of fruits fresh from the farm. Peach and Blackberry Crumble Preheat oven to 375 Coat a 9x9 pan with a little coconut oil and set aside. In a bowl mix: 4 peaches, pit removed and sliced 1 pint blackberries 1/2 maple syrup 1 tsp arrowroot starch dissolved in 2 tbsp water 1/2 sea salt In another bowl mix: 1 1/2 cups Gluten Free Oats (I use Bob’s Redmill) 1/2 cup almond meal 1/3 cup melted coconut oil 1/2 cup maple syrup 1 tsp vanilla 1/2 sea salt Add the fruit mixture into the square baking pan. Top with the crumble mixture. Bake for 25 minutes until golden. Cool for 5 minutes then serve.
